I run a center-trac in my modded FHZ because when I was recessing it i accidentally cut the bearing lip, so i need the center-trac to keep the slippage at bay. It still plays amazingly.
My stock fhz is beefcaked with stock bearings.

I'm not particular. Most of my Freehands have deshielded stock bearings. I have one with a kk and one with a Taka - I like those as well, but not any more than the stock bearings.

several people have mentioned they stick with the stock bearing but deshielded... what has removing the shields got to do with the performance of the bearing?

To clean the bearing well, I remove the shields - others might argue that you can clean them fine with the shields on, but my experience differs. There's two reasons I don't put them back on: 1. Having them off makes it quick and easy to clean your bearings. 2. In the world of cycling, there's a view that bearings (in hubs and in bottom bracket cups) spin with less resistance when the shields aren't there to potentially add friction. I'm not 100% sure that the latter is true, but experience suggests that there's something to it - and if there is, it stands to reason that the same would apply to yoyos as well.

What ever one that is in it when it comes.
Shields only help to keep lube in on yoyos. Since the side of the yoyo sits so close to the yoyo, half's them self's act as shields.
In bikes the shields do add friction but those are sealed bearings. They have rubber seals, that do in fact add friction.

I've had a BC Grooved bearing in mine for ages, but I'd also be perfectly happy with a stock bearing. In a smaller gapped yo-yo with higher walls like a FHZ it really doesn't make a whole lot of difference if your string is centered.
